How to cook it

Sauté

Heat oil and sauté shallots and curry leaves.

Add the masala

Add the full 50 g sachet and water, and bring it to a boil. No tamarind, no salt.

Simmer the fish

Add your fish and simmer till it's cooked and the curry is as thick as you like.

Do I need to add tamarind?

No. Tamarind and salt are already in, balanced for you.

How do I keep the fish pieces whole?

Add the fish once the gravy has boiled, then simmer gently. Swirl the pot instead of stirring.

How is it different from Kerala Fish Curry Masala?

This is the Madras meen kulambu: hot, fiery, tangy and thinner, for rice. Kerala Fish Curry is the full-bodied toddy-shop style, for matta rice.
