Every sachet carries the whole dish: the masala, the salt, the ginger-garlic, even the tamarind. No grinding, no guessing, nothing extra to buy.
How to cook it
Kerala Roast and Ularthu, in three steps.
Onion and tomato
Sauté sliced onions in 3 tbsp oil till deep brown, then add a chopped tomato and cook till soft.
Add meat and masala
Add one full sachet and a little water. Add 500 g chicken and cook covered till tender, or add boiled eggs and simmer for 5 minutes.
Cook it down
Uncover and cook till the masala turns dark and clings. Serve with appam, parotta or coconut rice.
Pressure-cook the meat
Pressure-cook 500 g red meat with half the sachet (20 g) and a little water till tender.
Onion, coconut and masala
Sauté sliced onions in oil, then add the cooked meat, the other 20 g of masala, coconut chunks and curry leaves.
Roast it dry
Roast on a low flame, stirring, till the meat turns dark and dry. That's ularthu.

Do I need to add anything else?
Just your main ingredient and the basics you already keep — oil, onion, tomato. The masala, the salt and the ginger-garlic are already in the sachet.
How spicy is it?
Medium. These are built for homestyle Kerala cooking, not restaurant heat. Use less of the sachet if you want it milder.
How many servings does one pack make?
More than one. The exact number is printed on each pack — it varies by masala.
Which one should I start with?
Kerala Roast if chicken is your regular. Kerala Fish Curry if fish is the weekly staple. Malabar Biryani for the weekend.
