Chef Yash: A Journey of Passion, Pride, and Dumplings
At Cookd, we celebrate the diversity and passion that make the culinary world so vibrant. We're thrilled to introduce you to Chef Yash, a culinary talent whose journey from West Bengal to the bustling kitchens of Bombay is as inspiring as it is delicious.
Yash's love for cooking sparked in his childhood home in Calcutta. Despite his family's lack of culinary background, Yash was drawn to the kitchen, experimenting with flavors and techniques. His family, initially hesitant, eventually supported his decision to pursue a culinary career.
After completing his education in Dehradun and Uttar Pradesh, Yash enrolled in Manipal University's esteemed culinary program - BA in culinary arts. This experience laid the foundation for his culinary journey, equipping him with the skills and knowledge he would need to succeed in the industry.
Post-graduation, Yash interned at ITC, Marriott, and Yaucha, gaining invaluable hands-on experience. His culinary journey then took an exciting turn when he joined Yauatcha, a renowned dim sum teahouse. Here, Yash discovered his love for making dumplings, a passion so strong he admits to craving them even at 2 am!
Despite his talent and dedication, Yash faced challenges in his career. At The Oberois, where he worked as a kitchen assistant, he encountered prejudice and underestimation. However, Yash turned these challenges into opportunities, proving his worth and managing an understaffed kitchen gracefully and efficiently.
Yash's personal journey as a gay man has also been challenging. Struggling with his family's lack of acceptance, he took a break from the professional kitchen. He found solace in a luxury cooking studio in Calcutta, before returning to the culinary scene in Bangalore, where he connected with celebrity chef Abhijit Saha. This led him to Bombay, where he is working with ex-Yauatcha chef Harsh Dixit, where they do high-profile events for cricketers and celebrities.
In the kitchen, Yash champions respect and equality. He believes in addressing everyone as 'chef', fostering a sense of camaraderie and mutual respect. He also emphasizes the importance of organization and planning, ensuring smooth operations in the kitchen.
Yash's journey is a testament to the power of passion, resilience, and authenticity. His story serves as an inspiration to aspiring chefs everywhere, particularly those within the LGBTQ+ community.
At Cookd, we're honored to share Yash's story and his love for dumplings with you. Because in our kitchen, everyone is welcome, and every story is worth telling.
